Culinary innovation in the IDF: the food of the future is coming to the battlefield

The IDF is in the midst of an innovative move to improve the food provided to fighters in the field. These days, the army is testing eight advanced developments from the Israeli food-tech industry, which promise to change the experience of eating in field conditions. These developments offer food solutions with a long shelf life, rich in nutritional values, And equally important - tasty, adapted to a wide range of operational activities.

Ayala Zorf, director of technological development at the Israel Defense Forces, explains in an interview to the IDF spokesperson, the rationale behind the initiative: “We were looking for food solutions based on innovative technology, adapted to different types of activities, such as considerable physical effort, recovery or ambushes.” She emphasizes Because the goal is to find food items that will provide an answer to all fighters, including those who adhere to a vegetarian or vegan diet, and provide them with the energy needed in operational activities or on the battlefield.

Among the impressive developments presented, you can find a wide variety of options: powders for creating sweet smoothies, one is produced from freeze-dried fruits and the other from buckwheat; Colorful crackers made from natural vegetables only, without added preservatives; A nutritious breakfast based on oats, which can be easily prepared even in field conditions; and dried food capsules that turn into a rice dish with vegetables by adding hot water only.

In addition, solutions designed specifically for the vegan population were presented, such as ‘cabanos’ made of spirulina, and ‘meat chunks’ based on pumpkin seeds and constituting a complete meal. “These are options rich in protein, which are also suitable for the conditions of the Israeli climate,” points out Ayala.

The developments were examined as part of a unique conference, in which representatives of the branches, commands, and senior officials from the Supply Center (Maras) participated. The participants tasted, rated and gave detailed feedback on each of the items. .

Besides the taste test, all the items were required to meet a number of other criteria: adaptability to field conditions without refrigeration, an easy-to-carry package, and the possibility of immediate eating or simple preparation by adding only water.

The initiative is part of a unique program by ATL in collaboration with the Ministry of Defense, CTO and the Israel Institute of Innovation, which aims to integrate civilian technologies into the military system in a fast and efficient manner. “The program helps the department introduce innovations easily and quickly,” Ayala explains.
In the coming months, the final decisions are expected to be made by MCL (Chief Logistics Officer Headquarters) and MRAS (General Staff Supply Center), who lead the field of feeding in the IDF.
